Pasta lunchboxes

The beauty of these lunchboxes is variation! Ingredients can easily be interchanged
so your dinner never becomes tedious. Swap pasta with brown rice or couscous, or
salad for a lighter option. Switch chicken to other meats, and a vegan
alternative is another possibility. Quite frankly, this option is my favourite! However don’t be scared to experiment with other ingredients to find your favourite.
Prep time: 5 mins
Cook time: 10 mins (prep whilst pasta boils)
Total time: 10 mins
Ingredients:
125g of Fusilli/Penne pasta
30g of Chicken
¼ of pepper (red or yellow)
25g of baby plum tomatoes
Method:
Boil 300ml of water, and place the pasta into a pot. Once boiled, pour the water over
the pasta and bring to the boil with a medium heat. The pasta needs around 10-12
minutes to cook, which leaves you plenty of time to cut your ingredients.
Chop the chicken, pepper and tomatoes into bite-size chunks, and place on a
separate plate. Continue to stir the pasta while you’re doing this, otherwise it will stick together, creating some kind of carbohydrate blob when cooked.
Once the pasta has boiled drain using a colander, and serve with your toppings. This
recipe makes for a great lunch to take to Uni with you. Simply buy a plastic container
suitable for your portion size and you’ve got yourself and easy, enjoyable lunch to get
you through a hard day of study!
