Banana cupcakes

These cupcakes a great alternative to the unhealthy chocolate or caramel toppings. A great guilt-free snack, these cupcakes can be used to wow your friends or flatmates when it’s your turn to cook. Give them a try if you're looking for a challenge!

Recipe by: baking with Granny

Ingredients:

2 bananas

140g caster sugar

55g butter

1 egg

1 teaspoon of vanilla extract

3 tablespoon of milk

225g Self-raising flour

1 teaspoon of baking powder


Method:

Preheat the oven to 170c, and place twelve cupcakes cases over an empty baking tray.

Mash the bananas up in a large bowl. Once crushed, add the butter and sugar, mixing well.

Whisk the egg, milk and vanilla extract in a separate bowl. When whisked, add to the banana mixture. Gently sift the flour and baking powder onto the mixture, before folding over to form a light batter.

Using an ice cream scoop, place the mixture into the cupcake cases, filling to 2/3 full. Bake in the oven for 20 minutes, until the cupcakes have risen. Once cooked, transfer the cupcakes to a wire rack to cool completely.
