Big burrito

This burrito is packed with meat and greens, and is full of flavour. Surprisingly easy, and taking only 15 minutes to make, it isn’t time consuming either. The steak works brilliantly with the mixture of veg, but can be substituted to cheaper meats such as chicken for those struggling with budgets.

Cooking time: 10 mins

Ingredients:

1 tablespoon of coconut oil

500g of sirloin steak

1 red onion

1 red pepper

1 clove garlic

1 teaspoon paprika

6 cherry tomatoes

2 large tortilla wraps

Small bunch of coriander

Squeeze of lime juice

Salt and pepper


Method:

Cut the steak into thin slices, before chopping the onion, pepper, garlic and tomatoes into bite-size pieces.

Using a large frying pan, heat the coconut oil over a high temperature. Add the steak slices, and fry for 2 minutes, stir the meat as it fries. Throw in the onion, red pepper and garlic and continue to stir-fry for 2 more minutes. Add the paprika and tomatoes and stir for another 2 minutes. Season with salt and pepper, and fry for a further minute.

Remove from the heat, and evenly pile half of the mixture through each wrap. Top with chopped coriander and a squeeze of lime juice. Fold the wraps at both sides, and enjoy!
