Chicken & broccoli noodles

I felt as though I had to include this, with the stereotype around students and noodles

being so strong nowadays. Noodles are cheap and easy, so why not spice them up

with some meat and veg? Supplementing your favourite snacks with meats and

greens will transform a bland snack into nutritious meals.

Ingredients:

1 pack of your favourite noodles

150g of chicken fillets

125g of broccoli, preferably fresh

½ a red pepper.

Method:

Start by chopping your chicken fillets into small pieces, cut the pepper after this, but be careful to use a separate knife to avoid contamination.

Heat the oil in a frying pan on a medium heat, and add the chicken to the pan once the oil is heated. Cook the chicken for 5 minutes, using a wooden spoon to constantly turn over and flip the chicken chunks.

As you’re doing this, boil the noodles to that of the instructions on the packaging. Once cooked, drain with a colander and set aside for the rest of the meal.

Add the broccoli and peppers to the pan, and continue to cook for a further 5 minutes. At this point the chicken will be nearly cooked. Add the pre-boiled noodles and stir-fry for another 2 minutes. Turn off the heat and slide the dish from the pan onto a plate or bowl, and serve.
