Love Nando’s but hate the price? I used to spend every Friday night eating chicken there, until I discovered how easy it was to make my own. This recipe enlightened me as to how easy restaurant food is to imitate, for a fraction of the price!
Prep time: 10 mins
Cooking time: 20 mins
Total time: 30 mins
Ingredients:
300g chicken breasts
10 Peri-Peri rub
1 pack of savoury rice
Nando’s Peri sauce (choose your temperature)
Method:
Put the chicken breasts on a clean chopping board, Place the palm of your hand over the breast.
Using a sharp knife, cut half way down the side of the breast. Be careful not to cut all the way
through. The chicken breast will now be double the size, but much thinner. Repeat this with the other chicken breast.
Sprinkle the Peri-Peri rub over the chicken, carefully rubbing it into both sides of the breast.
Place the chicken in a large piece of foil, and enclose the foil around the chicken.
Put the chicken in the oven at 190c for 20 minutes. Once the chicken is ready, make sure the chicken is white by slicing into it.
Once the chicken is cooked, remove from the oven and serve with rice or chips. Add some salad and a soft roll to go for a burger instead.
