Scrambled eggs & chorizo

Eggs are one of my favourite things to eat, but scrambled are the best! Add some chorizo and you’ve got yourself a great little breakfast to cook on one of your mornings off. It’s also brilliant as a dinner, and is super easy to make. Happy days!

Ingredients:

Olive oil

250g chorizo

1 knob of butter

4 eggs

Splash of milk

Grated cheese

½ a red onion

1 spring onion


Method:

Heat olive oil in a frying pan under a medium heat. Slice both the red and spring onion,

and cut the chorizo, whilst the oil heats. Once heated, add the red and spring onions to the pan and cook for 10 minutes. After they have cooked, remove both onions from the pan, and place in a separate bowl to cool.

Using the same pan, fry the chorizo slices for 15 minutes. Once cooked, add to the cooked onions.

Melt a knob of butter in a separate pan, and add 4 beaten eggs to cook. Add a splash of

milk, and cook until the eggs set. When cooked, remove from the heat and serve with the

chorizo and red onion. Serve with grating some cheese over the top.
